The Viognier grape is known for producing a more layered, complex white wine. This is Mike Brown's second vintage using this fascinating varietal in Kalyra's dessert program as part of the Sticky Wicket/ Eiswein series. Eisweins or "Ice Wines" are made from frozen grapes usually picked at the first freeze in the fall. Here in sunny California we do it a little differently (our secret), resulting in a very concentrated, rich juice for the start of fermentation. Its final product is an outstanding delicacy of silky, rich flavors that include peach, lychee, Plumeria and honey.
Pair it with soft cream-based desserts, or enjoy on its own. Serve chilled.
